I never seem to eat my bananas quick enough. Or, it may be a subconscious decision so I can make banana bread. This bread was to die for, and you can easily add in ingredients that you have on hand. For this loaf it was chocolate chips, toffee pieces & roasted pecans. Enjoy!
Ingredients:
1 1/2 cups ripe & mashed banana (3-4 medium bananas)
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 cup unsalted butter, melted
2 large eggs
1 tsp vanilla extract
1/2 cup Greek yogurt
1 1/3 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup mini chocolate chips
1/4 cup toffee pieces
1/2 cup roasted pecans for topping
Directions:
1) Preheat oven to 325F. Grease & line a 9×5 loaf pan with parchment paper
2) In a bowl, whisk together the flour, baking soda, & salt
3) In a separate bowl, mix together the melted butter & sugars until you reach a paste-like consistency
4) Add in the mashed bananas followed by the eggs, yogurt, & vanilla
5) Once all of your wet ingredients are mixed together, fold in the dry ingredients. Then, fold in the chocolate chips & toffee pieces
6) Pour the batter into your prepared loaf pan. Sprinkle with roasted pecans
7) Bake for 1 hour – 1 hour 15 minutes or until a toothpick comes out with a few moist crumb
8) Cool completely before removing from the pan. Store at room temperature in an air-tight container.
